dehydrating onions

this will be my second dehydrator load of onions.

i didn't get to build my solar dehydrator this year. our onions were only moderately prolific. we'll be able to process all of them in our little dehydrator without too much trouble.

the mandolin has been a real time saver.


i use the the fan to dissipate the onion fumes that make me cry.


a full load is about five pounds of onions. i guess we'll have about eight or nine more loads. one load is about a quart of finished onions. we use them like crazy all winter in soups, stews and crock-pot recipes. i like to eat them plain. they are sweet and surprisingly fulfilling.

I am so glad that you guys were able to use that madoline! I actually have the directions sitting on my desk, just unearthed them from a stack of stuff. Looks like you know how to use it, but I will pop them in the mail on Monday just so you have them. Hooray for onion cutting!! And be careful with that thing, it always scared me. *shivers*

llr, not sure about meat or cheese probably summer sausage..

annie, 1/4" ± 1/8" thinner dehydrates quicker, thicker stores more tightly. thicker stays in slabs dehydrates to nuggets. thinner the rings separate easily and drys to a fluff. you are gonna love them either way.

I had tears streaming down my cheeks before remembering to turn on the ceiling fan. :)

Mandolin slicer is awesome, we have a cheapo one from a thrift store but it sure is handy. We ran carrots and cukes through ours today.

I remember you dehydrating onions a year ago, I should really do that sometime. I stunted mine pretty badly by planting them with the peas (who knew?) so I think the whole crop will go to salsa, which we never seem to have enough of...

I'm planning to do a lot more dehydrating this year, too - especially onions. I don't have a very good storage area for my root crop, and I imagine that, worst case scenario, we'll depend a lot on drying things that don't do as well canned - like onions. I'm still waiting for the onions to be "done", but in the meantime, I'm really enjoying thinning the little green ones ;).
